Key Lime Tartlets

These key limes tartlets are actually an extremely delicious vegan recipe that are made easily in a Vitamix Blender. They are guilt-free and even gluten free. I served these at my reception party and they were a big hit. My husband absolutely loves key lime anything. So instead of indulging in pie or cheesecake, I make these little delights. The recipe is easy to make and easy to love. Oh and the best part is, this is a no-bake recipe. Vegan, raw, gluten free, paleo key lime tartlets… and they are amazing, what more could you ask for?

You can use either key limes or regular limes in this recipe. Heck, you can even use lemon or any other citrus if you’d like to mix things up a bit. Maybe you’re more of a lemon person, it works wonderfully in this recipe. If you use orange though, I’d reduce the amount of honey used in the filling considering oranges are the sweetest citrus.

If you or someone you know that you’re making these for, are allergic to coconut, just use grass-fed organic butter melted. The use of honey or agave is optional because I actually know some vegans are so vegan that they don’t even use/eat the honey from a bee. Personally, I love using local honey because it’s said to be most nutritious and best for people with allergies. Honey also packs in a lot of minerals.

Key Lime Tartlets in a Blender

Using a blender to make this is much easier than a food processor. The food processor has four components to clean up whereas the Vitamix blender just has two (the lid and base). When you’re done using it you can just add warm soapy water to 1/3 or half of it and blend it on the “clean” setting and it’s all set. Quick, easy cleanup. You like my new Vitamix? Want one? Key Lime Tartlets


  • For the Crust:
  • 1.5 cups pecans
  • 1.5 TBS 100% Pure Maple Syrup
  • 1.5 TBS Coconut oil
  • 1/2 tsp Vanilla extract
  • 1/8 tsp salt
  • For the Filling:
  • 3/4 cup Cashew Butter
  • 1/2 cup Key Lime juice
  • 4.5 TBS Honey (or Agave)
  • 4.5 TBS Melted Coconut oil (not too hot!)
  • 1/2 tsp Vanilla extract
  • 1/8 tsp salt


  1. Prepare the crust by placing all ingredients into a Vitamix Blender
  2. Line a mini muffin tin with mini muffin liners (trust me on this or it will be a pain in the bootie to get the tarts out)
  3. Fill the cups with 1 heaping teaspoon of mixed crust and push down with back of the teaspoon to firmly pack it in and get a nice little dip in the middle of the crust
  4. Set aside in the freezer to cool and harden while you make the filling.
  5. For the filling place all ingredients into your sexy-ass Vitamix blender and blend until smooth.
  6. Remove the filling when it's done and place into a Ziplock bag. Seal it. Then cut one corner (not too small, not to large of a cut).
  7. Pipe the filling into each cup and top with grated lime zest if you'd like to.
  8. Place in freezer for 2 or more hours. Serve chilled. Do not let them sit out long. This is an out of the fridge or freezer and into mouth type of food.

How to Store the Key Lime Tartlets

Store these little gems in an airtight container in the fridge. Whenever you want to eat a tartlet, just pull it out of the freezer, set on the counter for a few minutes; the tarts be perfectly ready to eat in no time. You can also top it with So Delicious Vegan Coconut Whip (like Cool Whip, but 100% better tasting and better for you). They’re good up to one month (if they last that long in there). These little bites are addicting.
