I was at my local farmers market this past weekend when I saw a juice stand selling different types of juices. I stopped to take a look and saw many interesting combinations, some that I’ve done before, but the Arugula Mint Lemonade really caught my attention. I absolutely love arugula, mint, and lemons… so to try all three combined might be worth making a video. So I did. It turned out great, but you have to like arugula in the first place to appreciate this recipe.
I used honey to sweeten the recipe since lemons are sour and arugula is bitter, but the refreshing mint taste is what makes this recipe a delight.

- 3 Lemons
- 1 to 1.5 cups Arugula
- 1 bunch of mint
- 20 ounces of water
- 1/4 or 1/3 cup honey to sweeten (Try using 1/4 cup first)
- Peel the lemons
- Wash the arugula and mint
- Juice the lemon, mint, and arugula in alternating order
- Add water and honey to the mix
- Stir well and enjoy
